Zucchini Chocolate Chip Cookies

Secret Recipe Club reveal day is one of my favorite days of the month.  I always look forward to hunting down the perfect recipe on an often new-to-me blog and then getting to share it with you!  It's a fun way to get inspiration and discover new blogs and recipes.

This month I was assigned to Erin's blog, Making Memories With Your Kids.  I was excited about this assignment because Summer is eating more table foods and I am excited to help expand her palate and try new foods with her.  I was hopeful that I could find some great ideas on Erin's blog.  I initially had decided to make Raspberry Swirls for lunch, but then forgot.  Then I thought I would make Peach Pie Bars, since I had an abundance of peaches, but I ended up making a peach cobbler instead.  So I went back to find another great recipe, and landed on these Martian Cookies (as Erin calls them).

I still had a few zucchinis from the farmer's market and needed to use them quickly, so these cookies were the perfect solution.  They came together quickly (mixed, baked, and cooled, all during nap-time!)  My parents grabbed one on their way out the door from babysitting and loved them.  When Summer got up from her nap, I grabbed a couple cookies to photograph them.  She was so interested in what I was doing and just had to have a cookie.  I thought I'd just give her a bite or two but my silly girl ended up eating an entire cookie by herself!

But they have zucchini in them, so they count as a vegetable, right?  :)
Melissa's Cuisine: Zucchini Chocolate Chip Cookies

Zucchini Chocolate Chip Cookies

Makes about 3 dozen

Ingredients:
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla
1-1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup oatmeal
1 cup shredded zucchini
1 cup chocolate chips

1.  In a large mixing bowl, beat together the butter and sugar until light and fluffy.

2.  Beat in egg and vanilla.

3.  Add flour, cinnamon, baking soda, and salt and mix until just combined.

4.  Stir in oatmeal, shredded zucchini and chocolate chips.

5.  Scoop cookie dough by the teaspoonful onto greased cookie sheets.

6.  Bake at 350 for 10-12  minutes.
