Sweet Potato Tots

Two simple ingredients, sweet potatoes and Parmesan cheese, make up these delicious and healthy Sweet Potato Tots.

After a few weeks off from blogging, I'm back!  I took some (unannounced) time off around Christmas and New Year's because Mike was off from work and I wanted to spend as much time with him as possible!  We had a wonderful Christmas and New Years.  It was so much fun watching Summer open her gifts and get excited about each one.  Oh, Christmas through the eyes of a toddler...

I anticipate that I'll be back to my regular blogging schedule now, but with a focus on healthier foods!  I hope you'll enjoy them!

I made these sweet potato tots for Mike's extended family's Christmas party.  When I was trying to decide what to bring, I asked Mike if he had any suggestions.  He requested something with sweet potatoes since he has really begun to like them.  I threw out a few ideas and he settle on Sweet Potato Tots.  We both loved these tots and ended up having a few leftovers to bring home, which neither of us minded!  (I will add though, these are much better the day of, and if you re-warm them, make sure heat them in the microwave to keep them crispy!

Sweet Potato Tots

Make 3 dozen

Ingredients:
3 sweet potatoes
1 cup grated parmesan cheese

1.  Peel and quarter sweet potatoes.

2.  Boil sweet potatoes in a large pot of water until they are almost (but not fully) cooked through.

3.  Pulse sweet potatoes in your food processor until small crumbles form.  (Mine was more pureed than crumbled...)  **You may need to do this in batches depending on the size of your food processor.

4.  Add the Parmesan cheese to the sweet potatoes and stir to combine.

5.  Form the potatoes into quarter sized balls and place on a parchment lined baking sheet.

6.  Bake at 425 for 10-15 minutes, turning every few minutes to get them browned on each side.

Serve warm, with ketchup if desired.
