Stuffed Bubble Pizza

This bubble pizza is stuffed with pepperoni and mozzarella and baked in a cast iron skillet for a fun pull-apart dinner.  It's a kid and adult pleaser and the perfect Superbowl snack!

How often do you eat pizza?  In our household it's typically once a week, but sometimes we splurge and have it twice (usually if we go to Mike's parents' for dinner).  We're okay with that, and especially okay with the leftovers, because let's face it, pizza is one of our favorite dinners!

For my birthday my parents gave me a cast iron skillet.  I've wanted one for a while, specifically to make this recipe! :)  When I received it, I immediately added this Stuffed Bubble Pizza to our menu.  Admittedly, it isn't very healthy, but I plan one splurge meal a week and it's typically pizza!

This recipe is a cross between pizza (obviously) and monkey bread.  It has all the flavors of pizza, but the concept and fun of monkey bread.  I chose to stuff each piece of "crust" with the pizza toppings and then poured sauce on top of them.  This made quite a large pan full, and Mike and I each only ate 3 pieces for dinner (along with a salad).  So be prepared for leftovers, it reheats well in the oven.  Summer also loved this recipe but who am I kidding, my child loves pizza! :)

Stuffed Bubble Pizza

Serves 8

Ingredients:
2-1/4 teaspoons yeast
1-3/8 cups water, 110 degrees
1 Tablespoon sugar
3 Tablespoons olive oil
3/4 teaspoons salt
4 cups flour
pepperoni slices (approximately 1 package)
2 cups mozzarella cheese
1 jar spaghetti sauce

1.  Sprinkle yeast into a large mixing bowl (or the bowl of your stand mixer) and pour water over it.  Allow it to sit for at least 5 minutes, until yeast begins to bubble.

2.  Stir in sugar, olive oil, salt, and flour and mix until a dough forms.

3.  Knead until dough is smooth and elastic, about 8-10 minutes by hand.  Using your stand mixer, it will take about 6 minutes.

4. Form the dough into a ball and place in an oiled bowl. Cover with plastic wrap and let it rise until doubled, about 1.5 to 2 hours.

5. Deflate dough by punching down.  Divide into equal pieces roughly the size of a golf ball.

6.  Flatten each piece of dough in the palm of your hand.  Place 2 slices of pepperoni and a generous pinch of cheese in the center.  Then bring the dough around the filling and pinch the seams to seal it.

7.  Place filled dough balls, seam down, in a cast iron skillet.  

8.  Pour spaghetti sauce over dough and top with mozzarella cheese.

9.  Bake at 350 for 35-40 minutes, until the dough is baked through.  Serve hot.
