Pumpkin Chocolate Chip Cookies

What goes better with pumpkin than chocolate?  Nothing!  These thick and fluffy cookies are a delicious fall treat!

I think every stage that Summer hits is my favorite.  I loved the cuddles when she was a newborn.  Then life got exciting as she began to roll over and notice things around her.  When she started crawling, it opened up a whole new world of entertainment for all of us.  And now...now, she is walking!  It's been so much fun to watch her grow and learn new things.

She has become more observant too.  I made these cookies and stored them in a clear container on our counter.  One day she was standing next to the counter pointing up at something.  It dawned on me that she had seen the cookies and wanted one.  Summer absolutely loved these cookies--good thing because they made a huge batch!  In fact, we went through a stage where she refused to eat just about everything.  Except she would eat these cookies....at least they have pumpkin in them! ;)

I went to a fall party at a friend's house and she served pumpkin chocolate chip cookies.  They were delicious and so I set out to find a recipe so I could make my own at home.  I saw this recipe and the picture looked exactly how I wanted my cookies to turn out--thick and fluffy.  I was not disappointed with this recipe.  It did make a ton of cookies, but I brought some to work and Summer we ate the rest.

I think I'll be making these cookies year-round...who says pumpkin is just for fall?

Pumpkin Chocolate Chip Cookies

Makes 4 dozen

Ingredients:
3/4 cup coconut oil (in solid form)
2-1/4 cups sugar
2 eggs
1 (15 ounce) can pumpkin
3-1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1-1/2 teaspoons vanilla
2 cups chocolate chips (1 16 ounce bag)

1.  Beat together the coconut oil, sugar, eggs, and pumpkin.

2.  Add in the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.  Stir until just combined.

3.  Stir in the vanilla and chocolate chips until evenly distributed.

4.  Drop by the teaspoonfuls on a greased baking sheet, about 2 inches apart.

5.  Bake at 350 for 10-12 minutes, until the cookies are set.
