Do you ever wish you had another hour in your day?  Without sacrificing sleep?  Life has become a constant juggling act, and I know it's my fault because I'm trying to do too many things!  Between being a full time wife and mom, working part time as an office manager, working part time as an online fitness coach, blogging, and a few other projects, I'm stretched to the max.  Some day I'll get it all figured out (ha!), but until then, please bear with me in my sporadic posting.  I'm not going to make any promises about how often or when I'll post.  I need to do something to relieve some of the stress and this is one of the most time consuming things I do! ;)  I love it though, so this isn't good-bye or anything, I'm just taking a step back and trying to take some pressure off myself to not have to post every other day!  I hope you'll understand!

But for today, I have a delicious Avocado Banana Bread to share with you.  It's another delicious clean eating recipe that I've added to my collection.  I saw the recipe when flipping through a free catalog I picked up at the grocery store and thought it would be a healthy and delicious alternative to my usual sugar-laden banana bread.  I had an avocado that desperately needed to be used and so this was the perfect recipe!

The bread is both dense and moist.  It's full of banana flavor and honestly you'd never know it had avocado in it unless I told you!  The first time I made this, I left out the sugar, trying to not use any added sweetener--I though that natural sugars in the bananas would be enough.  While the bread was good, it was missing something.  I'd definitely recommend using honey (instead of sugar) for a more flavorful bread. I also used whole wheat flour instead of white flour to keep this bread clean.

Avocado Banana Bread

Makes 1 loaf, about 12 servings

Ingredients:
3 bananas (over-ripe is best!)
1 avocado
1/4 cup coconut oil
1/2 cup honey
1 egg
1 teaspoon vanilla
1-1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda

1.  In a medium bowl, mash the bananas and avocado until smooth.  You can put the avocado in your food processor if you want to ensure there are no chunks.

2.  Add the coconut oil, honey, egg, and vanilla and beat until combined.

3.  In a separate bowl, combine the whole wheat flour, baking powder, and baking soda.

4.  Add the dry ingredients to the wet ingredients and stir until just combined.

5.  Pour batter into a greased bread pan.  Bake at 350 for 1 hour, until a knife inserted into the center of the bread comes out clean.

Cool before slicing.  Cover bread and store at room temperature or in the fridge.
